The GlenAllachie 19-year-old Ex-Solera Sherry Cask Matured

Master Distiller Billy Walker is renowned for his peerless wood management capabilities. For this rare edition in our Masters of Wood series, Billy has selected Pedro Ximénez and Oloroso casks that matured fine Sherry within a traditional solera system for over 55 years before hosting The GlenAllachie spirit.

Following an initial maturation in Bourbon casks, the spirit was transferred into these venerable ex-solera casks for its secondary maturation. The influence of these exceptional casks brings layers of rich dried fruit and warming spice, resulting in a luxuriously complex single malt that celebrates the harmony of wood, time and craftsmanship.

We proudly present this Masters of Wood bottling at 50% ABV, natural colour and non-chill filtered, allowing its distinctive character to reign supreme.

NOSE: Brandied plum, intense mocha and honeycomb, with caramel snaps, molasses tart and rich cocoa. 

TASTE: Plum syrup, treacle and warmed heather honey, followed by black cherries, mocha and brandied orchard fruits, with crystallised cinnamon and ginger.
